Hotdogs wrapped with crescent rolls!

You probably wonder is it really easy to make the crescent rolls? It is, but just the waiting for the dough to rise is the hard part. :-). In the the West, particularly in the US, you can just buy the dough in the grocery store and ready to bake. The crescent  dough was made by Pillsbury. Unfortunately here in the Philippines it’s very hard to get any Pillsbury product. Since me and my family are into crescent rolls. I have to do some researching on the net for a good recipe. I found one that I tried and it’s good.

Golden Crescent Rolls Recipe:

Ingredients:

  • 3 teaspoon active dry yeast
  • 3/4 cup warm water (I microwave for 30 seconds)
  • 1/2 cup white sugar
  • 1/2 teaspoon iodized or kosher salt
  • 2 eggs
  • 1/2 cup butter, room temperature
  • 4 cups all purpose flour
  • 1/4 cup butter, softened
  • Hot dogs (cook hot dogs first before putting inside the crescent)

Procedures:

  1. Dissolve the yeast in the warm water.
  2. Stir in sugar, eggs, salt, butter and the 2 cups of flour. Add yeast to the flour mixture. Beat until smooth. Add in the remaining flour and mix it well until smooth. Scrape the dough from side of bowl, knead dough, then cover it and let rise in a warm place until double the size around 1 1/2 hours.
  3. Punch down dough. Divide in half. Roll each half into a 12 inch circle  ( it doesn’t have to be perfect circle). brush with butter, cut into wedges (10-15 wedges).  Put hot dog in the dough on the wider side. Roll up the dough on the hot dog. Place the rolls  with the small end under on the greased baking sheet. Cover with cling wrap and let it rise until double in size, about an hour.
  4. Bake at 205°C for 15 minutes or until golden brown. Brush tops with butter when come out from the oven.

  • Hot dog
  • ham
  • pepperoni and pizza sauce (just like pizza)
  • chocolate

Squash – Pumpkin Cookies Recipe!

Since Thanksgiving is coming up soon in the States, I am gearing up for the feast. Ever since living back here in the Philippines we do celebrate every year. We just celebrate on a different day (Saturday) since no holidays for the the kids here on the Thanksgiving day Thursday.

I’ve been cooking some food that usually had squash ingredients with it. Trying really some new stuff too on Thanksgiving day. We found this recipe on the net for cookies and been cooking for  a few years now with this recipe. The main ingredients was the pumpkin. Well since we don’t have pumpkin here in Philippines I substituted it with squash. Some stores carry nowadays but it’s not often though. Quite honestly, I can’t even tell the difference between the two. It just taste like pumpkin to me. Everybody in the house loves the squash cookies. Really yummy.

Squash – Pumpkin Cookie Recipe:

Ingredients:

  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 ½ white sugar
  • ½ cup butter, softened (1 stick)
  • 1 cup homemade squash puree
  • 1 large egg
  • 1 teaspoon vanilla
  • Glaze

Procedures:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease or brush with butter the baking sheets
  3. Combine the flour, salt, baking soda, baking powder, nutmeg, and cinnamon in a bowl.
  4. Beat sugar and butter in a large mixing bowl until well combined. Beat the squashed, egg and vanilla until smooth. Slowly beat in the flour mixture.
  5. Using tablespoon drop onto the prepared cookie sheets. Bake for 15 to 18 minutes or until the edges are firm. Let it cool at the cookie sheets for 2-3 minutes. Then transfer to the wire racks to cool completely.
  6. Drizzle with the glaze.

 

***For Glaze: ( Combine 2 cups sifted powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter and 1 teaspoon vanilla in a bowl until combined and smooth). ***

Easy to make pasty recipe!

A classmate of mine from high school asked me the recipe of the pasty that I posted on my wall on Facebook. I was thinking of emailing the recipe to her privately. Well, I notice another classmate of mine asking who made the pasty,  so I just then decided to share the whole recipe with you guys. The recipe, its easy and simple to make. You can even put any veggies that your family like.

For some people they might prefer store bough pie crust. But being here in the Philippines, we pretty much make our own pie crust. I will share with you my pie crust recipe that I used.

Ingredients for the filling : 

  • A kilo of ground beef
  • 1-2 onions
  • 2 stalks celery
  • 3 potatoes, cubet
  • 2 carrots, cubed
  • 1 small singkamas (jicama or turnip), cubed
  • corn
  • Good amount of pepper
  • Salt
***Mix it all together using your hand. Put it aside after you’re done making the pie crust.

Pie crust ingredients: 

  • 1 1/2 cups all-purposed flour
  • 1/2 tsp. salt
  • 1/2 cup (or a stick) chilled & diced the butter (I put my butter in the freezer for 10-15 minutes before using)
  • 1/4 cup shortening (same procedure with the butter)
  • 3-4 tablespoons of ice water

***To prepare the crust. Mix all the ingredients together, for me I used my hands so that I can feel the consistency. Lightly flour the surface where the place to roll the dough. Cut the dough into 3 rounds. Using the rolling pin, roll the though until it reach to the thickness you desire. Then put the filling on the one side of the dough for the other to fold on top on it. Use fork to press the edge of the dough or start folding just a tiny edge from one side to the other. Like what I have on my picture. Cut a slit like an inch on top of the pie to vent. Brushed with beaten egg on the pasty before baking. Bake at 375 degrees Fahrenheit for an hour. Some use ketchup for dipping.

I know how to make binignit

You know what?  Recently, I learned how to make Binignit, or if you are Tagalog you would call it Ginataan.  Binignit is a favorite Filipino snack of mine!  I always love eating it, but never knew how to make it until just recently.

I even wrote an article over on the Live in the Philippines Web Magazine, including the whole recipe of how to make it!

Chicken salad

I saw this recipe on tv and I tried to cook it.

When we saw it on TV, we thought it looked delicious, that’s why I tried to cook it.

It really turn out good.  That’s why I’m glad I gave it a try!

I let Bob tastes it and he really liked it a lot. Bob’s been trying to eat salad now for a few months during dinner. This one is on our table a lot.

The ingredients are very easy to find, even here in the Philippines, so you can probably find them almost anywhere in the world.

Let’s have a look!

Chicken- with leg and thigh connected
Bacon
Lettuce
Sesame Seed
Ciabata or French Bread
Olive Oil
Dried Rosemary
Parmesan Cheese
Anchovy
Garlic
Cream Cheese
Vinegar
Salt & Pepper

Procedure:
Heat the oven to 450degrees Fahrenheit. Get frying pan that would be good for the oven too, spray non stick oil. Cut the bread(caibata or french) just enough to fit the pan maybe like 3 inches. Arrange it to cover the bottom of the pan. Then spread olive oil on top of the bread and season it with salt and pepper. Get plate put olive oil and lots of rosemary seed then roll the chicken in it. Then put the chicken on top of the bread put some more rosemary and a little salt and pepper. Put in the oven. Bake on the high temperature for 20 minutes. Then turn it down to 350 degrees Fahrenheit for maybe 2 hours or until the chicken turn brown. Then put like 7 strips of bacon on top of the chicken and bake again for maybe another 30 minutes till the bacon became crisps. Then take it out in the oven. Get bowl and crumple the bacon and the bread that turn into croûtons in the bowl then separate the chicken from the bone and put in the bowl. In a separate bowl wash lettuce and cut them to your liking and dry in the spinner. Toast the sesame seeds for a minute or so. After preparing the lettuce and the sesame seeds mix it to the bowl of the chicken.

Dressing:
Mash 1/4 clove of garlic, add one piece anchovy, a tablespoon of cream cheese, 2-3 tbsp. grated parmesan cheese, 2 tbsp vinegar, 6 tbsp extra virgin olive oil and a pinch of salt and pepper. Mix it all together, try to taste first before adding salt the parmesan might be already for your taste. You could also use your favorite dressing.
